Peanut Butter Bars

These bars are easy to make, and dissapear quickly in my house. I like to make multiple batches at once and freeze they. They're great frozen and right from the fridge. The will soften up if left out and don't hold up as well in warm weather.

If you're making this gluten-free make sure to get gluten-free oats.

Tip: if your honey is very solid and not pourable then put the jar into a bowl of hot water for 10 minutes. Make sure no water gets into the jar. This will soften it making it easier to mix into the batter.

Makes: enough to fill 1/4 sheet baking sheet

Ingredients:

  • 2 1/2 cups quick cooking oats (GF if needed)
  • 1 1/3 cups mini chocolate chips
  • 3 cups chunky peanut butter
  • 1 cup honey
  • 1 tbsp vanilla
  • 2 tsp fine sea salt

Equipment: large bowl, baking sheet, parchment paper


Instructions:

  1. Combine the oats, chocolate chips, peanut butter, honey, vanilla and salt in a large bowl.
  2. Pour the dough onto a parchment paper lined 1/4 sheet pan and put it into the refridgerator for a few hours until it hardens.
  3. Remove from the fridge and cut into bars or squares.
  4. Store in the fridge or freezer to help it keep it's shape.
